- 4 slices sourdough bread
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 tablespoons pesto
- 2 tablespoons softened butter
Instructions
- Place your skillet or griddle over medium heat to preheat.
- In a small bowl, mix the shredded mozzarella and cheddar together.
- Butter one side of each bread slice evenly.
- Spread pesto on the unbuttered side of two slices of bread.
- Top the pesto with a generous amount of the cheese mixture.
- Close each sandwich with the remaining bread slices, buttered side facing out.
- Place sandwiches in the skillet and cook for 3 to 4 minutes per side until golden brown and the cheese is melted.
- Let rest for one minute before slicing and serving.
Notes
- Use freshly grated cheese for best melting and flavor.
- Keep heat on medium to avoid burning the bread.
- Cover the pan to help melt cheese evenly.
- Try adding a pinch of chili flakes to your pesto for a spicy twist.
