Description
A creamy, velvety baked cheesecake swirled with bright, juicy pineapple on a buttery graham crust, chilled to silky perfection and crowned with whipped cream and golden pineapple.
Ingredients
- Graham cracker crumbs: 2 cups
- Unsalted butter (melted): 1/2 cup
- Cream cheese (softened): 24 ounces
- Granulated sugar: 1 cup
- Sour cream: 1 cup
- Large eggs: 3
- Vanilla extract: 2 teaspoons
- Crushed pineapple (well drained): 1 1/2 cups
- All purpose flour: 2 tablespoons
- Whipped cream: 1 cup
- Powdered sugar: 1/4 cup
- Pineapple rings or tidbits (for garnish): 1/2 cup
Instructions
- Preheat oven to 325°F (163°C). Place a large roasting pan on the lower rack and add hot water to create a water bath.
- Combine graham cracker crumbs with melted butter until evenly moistened. Press firmly into the bottom of a 9 inch springform pan.
- Wrap the outside of the springform pan with two layers of heavy duty foil to prevent leaks.
- Beat cream cheese on medium speed until smooth. Add granulated sugar and mix until combined. Blend in sour cream, then add eggs one at a time, mixing on low just until incorporated. Mix in vanilla.
- Fold in flour, then gently fold in well drained crushed pineapple. Pour batter over the crust and smooth the top.
- Place the pan on the middle rack above the water bath and bake for 60 to 70 minutes, until edges are set and the center has a slight wobble.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Remove, cool to room temperature, then refrigerate at least 6 hours or overnight.
- Before serving, whip cream with powdered sugar to soft peaks. Top cheesecake with whipped cream and garnish with pineapple rings or tidbits. Slice and enjoy.
Notes
- Note: Drain pineapple very well to avoid a watery filling.
- Line the pan base with parchment for easy release.
- For extra clean slices, warm a knife in hot water and wipe between cuts.
- If small surface cracks appear, chill fully and finish with whipped cream topping.
