Description

A creamy, velvety baked cheesecake swirled with bright, juicy pineapple on a buttery graham crust, chilled to silky perfection and crowned with whipped cream and golden pineapple.


Ingredients

  • Graham cracker crumbs: 2 cups
  • Unsalted butter (melted): 1/2 cup
  • Cream cheese (softened): 24 ounces
  • Granulated sugar: 1 cup
  • Sour cream: 1 cup
  • Large eggs: 3
  • Vanilla extract: 2 teaspoons
  • Crushed pineapple (well drained): 1 1/2 cups
  • All purpose flour: 2 tablespoons
  • Whipped cream: 1 cup
  • Powdered sugar: 1/4 cup
  • Pineapple rings or tidbits (for garnish): 1/2 cup

Instructions

  1. Preheat oven to 325°F (163°C). Place a large roasting pan on the lower rack and add hot water to create a water bath.
  2. Combine graham cracker crumbs with melted butter until evenly moistened. Press firmly into the bottom of a 9 inch springform pan.
  3. Wrap the outside of the springform pan with two layers of heavy duty foil to prevent leaks.
  4. Beat cream cheese on medium speed until smooth. Add granulated sugar and mix until combined. Blend in sour cream, then add eggs one at a time, mixing on low just until incorporated. Mix in vanilla.
  5. Fold in flour, then gently fold in well drained crushed pineapple. Pour batter over the crust and smooth the top.
  6. Place the pan on the middle rack above the water bath and bake for 60 to 70 minutes, until edges are set and the center has a slight wobble.
  7. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Remove, cool to room temperature, then refrigerate at least 6 hours or overnight.
  8. Before serving, whip cream with powdered sugar to soft peaks. Top cheesecake with whipped cream and garnish with pineapple rings or tidbits. Slice and enjoy.

Notes

  • Note: Drain pineapple very well to avoid a watery filling.
  • Line the pan base with parchment for easy release.
  • For extra clean slices, warm a knife in hot water and wipe between cuts.
  • If small surface cracks appear, chill fully and finish with whipped cream topping.
