Description

A hearty and comforting soup inspired by traditional Polish stuffed cabbage rolls, featuring ground meat, cabbage, rice, and a savory tomato broth.


Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 1 cup uncooked white rice
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until softened.
  2. Add ground beef and pork. Cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in chopped cabbage and cook for about 5 minutes until it starts to soften.
  4. Add uncooked rice, crushed tomatoes, tomato paste, beef broth, water, paprika, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes, or until the rice and cabbage are tender.
  6. Taste and adjust seasonings. Garnish with fresh parsley if desired before serving.

Notes

  • You can substitute ground turkey or chicken for a leaner version.
  • Use brown rice for added fiber, but adjust the cooking time accordingly.
  • Leftovers taste even better the next day as flavors develop.
