Poor Man Husband Casserole is a budget-friendly, hearty baked dish made with layers of seasoned ground beef, tomato sauce, creamy cheese, and tender egg noodles. It’s a comforting classic perfect for feeding a hungry family on a tight budget.

- 1 lb (450g) ground beef
- 1 small onion, chopped
- 2 cups egg noodles, cooked and drained
- 1 (15 oz) can tomato sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 cup sour cream
- 1 cup cottage cheese
- 1 1/2 cups shredded cheddar cheese
- Salt and black pepper to taste
- Cooking spray or butter (for greasing the baking dish)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain excess fat.
- Stir in tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- In a separate bowl, mix together the sour cream and cottage cheese.
- Layer half of the cooked noodles in the bottom of the prepared baking dish.
- Spread the sour cream and cottage cheese mixture over the noodles.
- Add the remaining noodles on top, then pour the beef and tomato sauce mixture over the noodles.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake uncovered for 25–30 minutes, or until the casserole is hot and the cheese is melted and bubbly.
Notes
- Use ricotta instead of cottage cheese for a richer texture.
- Ground turkey or chicken can be substituted for beef to reduce fat content.
- Let the casserole rest for 5–10 minutes before serving for easier slicing.
