Description

Poor Man Husband Casserole is a budget-friendly, hearty baked dish made with layers of seasoned ground beef, tomato sauce, creamy cheese, and tender egg noodles. It’s a comforting classic perfect for feeding a hungry family on a tight budget.


Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, chopped
  • 2 cups egg noodles, cooked and drained
  • 1 (15 oz) can tomato sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 1/2 cups shredded cheddar cheese
  • Salt and black pepper to taste
  • Cooking spray or butter (for greasing the baking dish)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain excess fat.
  3. Stir in tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. In a separate bowl, mix together the sour cream and cottage cheese.
  5. Layer half of the cooked noodles in the bottom of the prepared baking dish.
  6. Spread the sour cream and cottage cheese mixture over the noodles.
  7. Add the remaining noodles on top, then pour the beef and tomato sauce mixture over the noodles.
  8. Sprinkle shredded cheddar cheese evenly over the top.
  9. Bake uncovered for 25–30 minutes, or until the casserole is hot and the cheese is melted and bubbly.

Notes

  • Use ricotta instead of cottage cheese for a richer texture.
  • Ground turkey or chicken can be substituted for beef to reduce fat content.
  • Let the casserole rest for 5–10 minutes before serving for easier slicing.
