Potatoes Romanoff is a rich and creamy potato casserole made with shredded baked potatoes, sour cream, cheese, and onions. This classic steakhouse side dish is indulgent and perfect for special occasions or holiday meals.

- 3 large russet potatoes
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/2 cup finely diced shallots or onions
- 2 tbsp unsalted butter, melted
- Salt and pepper to taste
- 1/4 tsp garlic powder (optional)
- Chives or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Scrub and bake potatoes in their skins until tender, about 1 hour. Let cool completely or refrigerate overnight for easier shredding.
- Peel the cooled potatoes (optional) and coarsely grate them using a box grater.
- In a large bowl, combine shredded potatoes with sour cream, cheese, shallots, melted butter, salt, pepper, and garlic powder if using. Gently mix to combine.
- Transfer mixture to a greased 8×8-inch baking dish and spread evenly.
- Bake uncovered for 30–35 minutes, or until golden and bubbly on top.
- Garnish with chopped chives or parsley before serving if desired.
Notes
- For best texture, use cold baked potatoes. This helps them shred without turning mushy.
- You can prepare the dish ahead and refrigerate it before baking.
- Great as a side for grilled meats, especially steak or roast chicken.
