Instructions
- Preheat a skillet over medium heat.
- In a mixing bowl, combine pumpkin puree, cumin, paprika, and salt until smooth.
- Lightly brush the skillet with olive oil.
- Spread the pumpkin mixture over one tortilla, sprinkle shredded cheese evenly, and top with another tortilla.
- Place in the skillet and cook for 3 to 4 minutes on each side until golden and crispy.
- Remove from heat and let it rest briefly.
