Description

A warm and crispy pumpkin quesadilla filled with creamy spiced pumpkin and melted cheese, perfect for a quick and comforting meal.


Ingredients

  • 4 medium flour tortillas
  • 1 cup pumpkin puree
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt

Instructions

  1. Preheat a skillet over medium heat.
  2. In a mixing bowl, combine pumpkin puree, cumin, paprika, and salt until smooth.
  3. Lightly brush the skillet with olive oil.
  4. Spread the pumpkin mixture over one tortilla, sprinkle shredded cheese evenly, and top with another tortilla.
  5. Place in the skillet and cook for 3 to 4 minutes on each side until golden and crispy.
  6. Remove from heat and let it rest briefly.
  7. Slice into triangles and serve warm.

Notes

  • Do not overfill the quesadilla to keep it from breaking.
  • Cook on medium heat to ensure even crisping and melting.
