Description

A fast and comforting bowl made with seasoned ground beef, fluffy rice, hearty beans, and fresh toppings, perfect for busy weeknights when you want bold flavor without extra effort.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 2 cups water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup sweet corn kernels
  • 2 medium tomatoes, diced
  • 2 cups shredded lettuce
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil, then add ground beef and cook until browned.
  3. Stir in taco seasoning with a small splash of water and simmer briefly.
  4. Meanwhile, cook white rice with water according to package directions until fluffy.
  5. Warm black beans and corn in a small saucepan or microwave.
