Description
Raspberry Tiramisu is a refreshing twist on the classic Italian dessert, featuring layers of mascarpone cream, fresh raspberries, and coffee-soaked ladyfingers, offering a perfect balance of sweetness and tang.
Ingredients
Scale
- 1 cup fresh raspberries
- 1 package (7 oz) ladyfingers
- 1 cup brewed coffee, cooled
- 2 tablespoons raspberry liqueur (optional)
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cocoa powder (for dusting)
Instructions
- In a medium bowl, whip the heavy cream until soft peaks form. Set aside.
- In a separate bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- In a shallow dish, combine the cooled coffee and raspberry liqueur (if using).
- Quickly dip each ladyfinger into the coffee mixture, being careful not to soak them. Arrange the dipped ladyfingers in the bottom of a 9×9 inch dish.
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Top with half of the fresh raspberries.
- Repeat the layers with the remaining ladyfingers, mascarpone cream, and raspberries.
- Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
- Before serving, dust with cocoa powder and garnish with additional fresh raspberries if desired.
Notes
- For a non-alcoholic version, omit the raspberry liqueur.
- For an extra tangy twist, add lemon zest to the mascarpone cream mixture.
- Make sure to refrigerate the tiramisu long enough for the flavors to develop and the dessert to set properly.
