- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon harissa paste (adjust to taste)
- 1/2 cup heavy cream
- 1/4 cup vegetable broth or pasta water
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley or basil for garnish
Instructions
- Cook the ravioli according to package instructions. Drain and set aside, reserving a bit of the pasta water.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant, about 1 minute.
- Stir in the harissa paste and cook for another 30 seconds to release the flavor.
- Add heavy cream, vegetable broth (or pasta water), and smoked paprika. Stir until well combined.
- Simmer the sauce for 3–5 minutes until slightly thickened. Season with salt and pepper to taste.
- Add the cooked ravioli to the sauce and toss gently to coat.
- Serve warm, topped with Parmesan cheese and fresh herbs if desired.
