Description

A creamy and comforting soup inspired by the classic Reuben sandwich, filled with tender corned beef, cabbage, melted Swiss cheese, and a tangy touch of sauerkraut.


Ingredients

  • 2 cups corned beef, chopped
  • 2 cups green cabbage, shredded
  • 1 1/2 cups Swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1 cup milk
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place a large pot over medium heat and allow it to warm.
  2. Melt butter in the pot, then add chopped onion and minced garlic, cooking until softened and fragrant.
  3. Stir in the flour and cook for 1 minute to form a smooth base.
  4. Gradually add beef broth while stirring, then add shredded cabbage, chopped corned beef, and drained sauerkraut.
  5. Let the soup simmer for 20 minutes until the cabbage becomes tender and flavors blend together.
  6. Reduce heat and stir in milk, shredded Swiss cheese, and Dijon mustard until smooth and creamy.
  7. Season with salt and black pepper, then serve warm.

Notes

  • Use freshly shredded Swiss cheese for smoother melting
  • Drain sauerkraut well to avoid excess liquid
  • Keep heat low when adding cheese to prevent curdling
