- 2 cups green cabbage, shredded
- 1 1/2 cups Swiss cheese, shredded
- 1 cup sauerkraut, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 4 cups beef broth
- 1 cup milk
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place a large pot over medium heat and allow it to warm.
- Melt butter in the pot, then add chopped onion and minced garlic, cooking until softened and fragrant.
- Stir in the flour and cook for 1 minute to form a smooth base.
- Gradually add beef broth while stirring, then add shredded cabbage, chopped corned beef, and drained sauerkraut.
- Let the soup simmer for 20 minutes until the cabbage becomes tender and flavors blend together.
- Reduce heat and stir in milk, shredded Swiss cheese, and Dijon mustard until smooth and creamy.
- Season with salt and black pepper, then serve warm.
Notes
- Use freshly shredded Swiss cheese for smoother melting
- Drain sauerkraut well to avoid excess liquid
- Keep heat low when adding cheese to prevent curdling
- Add a splash of broth if the soup thickens too much
