- 8 oz (225g) fettuccine or pasta of choice
- 2 tbsp olive oil
- 2 chicken breasts, sliced thinly
- 8 oz (225g) mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add mushrooms and cook until tender and browned. Add garlic and sauté for 1 minute.
- Pour in chicken broth and let it reduce slightly for 2 minutes.
- Lower heat and add heavy cream, Parmesan, and Italian seasoning. Stir until the sauce is smooth and thickened slightly.
- Return chicken to the skillet and simmer for 2–3 minutes.
- Add the cooked pasta and toss to coat in the creamy sauce.
- Garnish with fresh parsley and serve hot.
Notes
- Use rotisserie chicken for a quicker version.
- Add spinach or sun-dried tomatoes for extra flavor and color.
- Substitute half-and-half for a lighter sauce.
