Description
A classic rich butter cake that’s soft, fluffy, and full of buttery flavor. This fail-proof recipe is perfect for any occasion and pairs wonderfully with tea or coffee.
Ingredients
Scale
- 1 cup (230g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 4 large eggs, at room temperature
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (120ml) whole milk, at room temperature
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan or an 8-inch round cake pan with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until pale and fluffy using an electric mixer.
- Add the eggs one at a time, beating well after each addition.
- Sift together the flour, baking powder, and salt. Gradually fold into the butter mixture, alternating with the milk, starting and ending with the dry ingredients.
- Stir in the vanilla extract until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Ensure all ingredients are at room temperature for best results.
- You can substitute whole milk with buttermilk for extra tenderness.
- This cake tastes even better the next day as the flavors develop.
