Description

Ricotta Bruschetta with Roasted Tomatoes is a fresh and flavorful appetizer featuring creamy ricotta, sweet roasted cherry tomatoes, and crispy toasted bread.


Ingredients

  • 1 baguette, sliced
  • 1 cup ricotta cheese
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp balsamic vinegar
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cherry tomatoes on a baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper.
  3. Roast for 20 minutes, or until tomatoes are soft and slightly blistered.
  4. While tomatoes roast, toast baguette slices until golden.
  5. In a small bowl, mix ricotta with minced garlic and a pinch of salt.
  6. Spread ricotta mixture on each toasted slice.
  7. Top with roasted tomatoes and a drizzle of balsamic vinegar.
  8. Garnish with fresh basil and a final drizzle of olive oil if desired.
