Instructions
- Preheat oven to 400°F (200°C).
- Place cherry tomatoes on a baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper.
- Roast for 20 minutes, or until tomatoes are soft and slightly blistered.
- While tomatoes roast, toast baguette slices until golden.
- In a small bowl, mix ricotta with minced garlic and a pinch of salt.
- Spread ricotta mixture on each toasted slice.
- Top with roasted tomatoes and a drizzle of balsamic vinegar.
- Garnish with fresh basil and a final drizzle of olive oil if desired.
