Description
A savory and aromatic Roasted Za’atar Chicken seasoned with a blend of Middle Eastern herbs and spices, crispy on the outside and tender and juicy on the inside.

- 1 whole chicken (about 1.5–2 kg)
- 2 tablespoons za’atar spice blend
- 3 tablespoons olive oil
- 1 lemon, cut into quarters
- 4 garlic cloves, crushed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 200°C (400°F).
- Pat chicken dry with paper towels and place in a roasting pan.
- Mix together za’atar, olive oil, crushed garlic, lemon juice, salt, and pepper in a small bowl.
- Rub mixture all over chicken, making sure to get under the skin.
- Arrange lemon quarters around chicken in the pan.
- Roast for about 1 hour or until chicken is crispy outside and fully cooked inside (internal temperature reaches 74°C or 165°F).
- Remove from oven and let rest 10 minutes before serving.
Notes
- For a richer flavor, let chicken marinate in za’atar mixture for 1-2 hours in the refrigerator.
- Pair with a side of rice or roasted vegetables.
- Save leftovers for salads or sandwiches.
