Description

A savory and aromatic Roasted Za’atar Chicken seasoned with a blend of Middle Eastern herbs and spices, crispy on the outside and tender and juicy on the inside.


Ingredients

  • 1 whole chicken (about 1.52 kg)
  • 2 tablespoons za’atar spice blend
  • 3 tablespoons olive oil
  • 1 lemon, cut into quarters
  • 4 garlic cloves, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Pat chicken dry with paper towels and place in a roasting pan.
  3. Mix together za’atar, olive oil, crushed garlic, lemon juice, salt, and pepper in a small bowl.
  4. Rub mixture all over chicken, making sure to get under the skin.
  5. Arrange lemon quarters around chicken in the pan.
  6. Roast for about 1 hour or until chicken is crispy outside and fully cooked inside (internal temperature reaches 74°C or 165°F).
  7. Remove from oven and let rest 10 minutes before serving.

Notes

  • For a richer flavor, let chicken marinate in za’atar mixture for 1-2 hours in the refrigerator.
  • Pair with a side of rice or roasted vegetables.
  • Save leftovers for salads or sandwiches.
