- 2 tablespoons olive oil

- 1 teaspoon dried oregano

Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the zucchini slices with olive oil, minced garlic, dried oregano, salt, and pepper until evenly coated.
- Spread the zucchini slices in a single layer on the prepared baking sheet.
- Roast in the oven for 15–20 minutes, flipping halfway through, until the zucchini is golden and tender.
- Optional: Sprinkle with Parmesan cheese during the last 2 minutes of roasting.
- Remove from oven and serve warm.
Notes
- For extra flavor, add a squeeze of fresh lemon juice before serving.
