Description

This roasted zucchini recipe is a simple, flavorful side dish that brings out the natural sweetness and tenderness of zucchini. Roasting adds a delicious caramelized texture, making it perfect alongside any main course.


Ingredients

  • 4 medium zucchinis, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the zucchini slices with olive oil, minced garlic, dried oregano, salt, and pepper until evenly coated.
  3. Spread the zucchini slices in a single layer on the prepared baking sheet.
  4. Roast in the oven for 15–20 minutes, flipping halfway through, until the zucchini is golden and tender.
  5. Optional: Sprinkle with Parmesan cheese during the last 2 minutes of roasting.
  6. Remove from oven and serve warm.

Notes

  • For extra flavor, add a squeeze of fresh lemon juice before serving.
