A savory twist on traditional Irish soda bread, this Rosemary Cheddar Soda Bread is filled with sharp cheddar and aromatic rosemary — perfect as a side with soup or a hearty breakfast loaf.

- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups shredded cheddar cheese
- 2 teaspoons chopped fresh rosemary
- 1 3/4 cups buttermilk
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine flour, baking soda, and salt.
- Add cheddar and rosemary and toss to combine.
- Make a well in center and pour in buttermilk. Mix until a soft, slightly sticky dough forms.
- Turn dough onto a floured surface and knead briefly, then shape into a round loaf.
- Score a deep “X” on the top of the loaf with a sharp knife.
- Bake for 30-35 minutes or until loaf is deep golden and sounds hollow when tapped on bottom.
- Remove from oven and let cool on a wire rack.
Notes
- For a milder flavor, use medium cheddar instead of sharp cheddar.
- Dried rosemary can be substituted if fresh is unavailable (use 1 teaspoon).
- Serve warm with butter or alongside a hearty soup.
