Description

A savory twist on traditional Irish soda bread, this Rosemary Cheddar Soda Bread is filled with sharp cheddar and aromatic rosemary — perfect as a side with soup or a hearty breakfast loaf.


Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese
  • 2 teaspoons chopped fresh rosemary
  • 1 3/4 cups buttermilk

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine flour, baking soda, and salt.
  3. Add cheddar and rosemary and toss to combine.
  4. Make a well in center and pour in buttermilk. Mix until a soft, slightly sticky dough forms.
  5. Turn dough onto a floured surface and knead briefly, then shape into a round loaf.
  6. Score a deep “X” on the top of the loaf with a sharp knife.
  7. Bake for 30-35 minutes or until loaf is deep golden and sounds hollow when tapped on bottom.
  8. Remove from oven and let cool on a wire rack.

Notes

  • For a milder flavor, use medium cheddar instead of sharp cheddar.
  • Dried rosemary can be substituted if fresh is unavailable (use 1 teaspoon).
  • Serve warm with butter or alongside a hearty soup.
