Description

A delicious copycat of Ruby Tuesday’s famous pasta salad, featuring rotini pasta, ham, peas, and a creamy ranch-style dressing. It’s a perfect side dish for picnics, potlucks, or summer meals.

Ingredients

Scale
  • 3 cups rotini pasta (uncooked)
  • 1 cup diced ham
  • 1 cup frozen peas (thawed)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup ranch dressing
  • 1 tbsp apple cider vinegar
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water, then set aside to cool.
  2. In a large mixing bowl, combine the mayonnaise, ranch dressing, apple cider vinegar, garlic powder, salt, and pepper to make the dressing.
  3. Add the cooked pasta, diced ham, thawed peas, red onion, and shredded cheddar cheese to the bowl.
  4. Toss everything together until well coated with the dressing.
  5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.

Notes

  • You can substitute turkey or chicken for ham if preferred.
  • Add a pinch of dill or chopped fresh herbs for extra flavor.
  • This salad tastes even better the next day after chilling overnight.
