Description
Golden-crusted, tender-crumb no-knead bread perfumed with fresh rosemary and sweet roasted garlic. Minimal effort, bakery results.
Ingredients
- All-purpose flour, 3 1/4 cups (390 g)
- Warm water, 1 1/2 cups (355 ml)
- Instant yeast, 1/2 teaspoon
- Fine sea salt, 2 teaspoons
- Fresh rosemary, 2 tablespoons (finely chopped)
- Roasted garlic, 1 whole head (cloves mashed)
Instructions
- Preheat a Dutch oven with its lid in a 450°F (230°C) oven for 30 minutes.
- In a large bowl combine flour, salt, yeast, rosemary, and roasted garlic. Add warm water and stir until a shaggy dough forms.
- Cover the bowl and let the dough rest at room temperature for 12 to 18 hours until puffy and bubbly.
- Turn dough onto a lightly floured surface, gently shape into a ball, and set on a sheet of parchment.
- Lower the dough, parchment and all, into the preheated Dutch oven. Cover and bake for 30 minutes.
- Remove the lid and bake 15 to 20 minutes more until deeply golden. Transfer the loaf to a wire rack and cool completely.
- Slice, serve warm, and enjoy with olive oil or butter.

- Use room temperature water to encourage steady fermentation.
- Roast the garlic ahead for a mellow, sweet flavor.
- Longer rise equals deeper flavor, allow the full fermentation time.
- Preheating the Dutch oven ensures a crackly crust.
- Let the loaf cool before slicing to keep the crumb airy.
