- 1 cup powdered sugar
- ¼ cup salted caramel sauce
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together oats, flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate large bowl, cream the butter with brown sugar and granulated sugar until light and fluffy.
- Beat in the egg, molasses, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized dough balls onto the baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are firm and centers are set.
- Remove from oven and cool completely on wire racks.
- For the filling, beat the softened butter until creamy, then gradually add powdered sugar, salted caramel sauce, vanilla, and salt; beat until smooth.
- Once cookies are cooled, spread a generous amount of filling on the bottom side of one cookie and sandwich with another.
- Repeat with remaining cookies to form oatmeal cream pies.
