Description

Deliciously soft gingerbread oatmeal cookies sandwich a creamy salted caramel filling, creating a perfect balance of spicy, sweet, and buttery flavors in these indulgent oatmeal cream pies.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda

  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • ⅓ cup molasses
  • 1 tsp vanilla extract
  • For the filling:
  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ¼ cup salted caramel sauce
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate large bowl, cream the butter with brown sugar and granulated sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized dough balls onto the baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are firm and centers are set.
  8. Remove from oven and cool completely on wire racks.
  9. For the filling, beat the softened butter until creamy, then gradually add powdered sugar, salted caramel sauce, vanilla, and salt; beat until smooth.
  10. Once cookies are cooled, spread a generous amount of filling on the bottom side of one cookie and sandwich with another.
  11. Repeat with remaining cookies to form oatmeal cream pies.
