Description
Soft, fluffy brioche rolls infused with a rich honey butter and the earthy aroma of fresh sage. Finished with a hint of flaky sea salt, these rolls are a gourmet twist on a classic comfort bread.

- 3 1/2 cups (420g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1 tsp salt
- 4 large eggs
- 1/2 cup (120ml) warm milk
- 1/2 cup (115g) unsalted butter, softened
- 1/4 cup (60g) honey
- 6 fresh sage leaves, finely chopped
- 2 tbsp unsalted butter (for topping)
- 1 tbsp honey (for topping)
- Flaky sea salt, for sprinkling
Instructions
- In the bowl of a stand mixer, whisk together flour, sugar, yeast, and salt.
- Add eggs and warm milk. Mix using the dough hook until combined.
- Add softened butter one tablespoon at a time, mixing until the dough is smooth and elastic (about 10 minutes).
- Cover and let the dough rise in a warm place until doubled in size, about 1–1.5 hours.
- Grease a 9×13-inch baking dish. Divide the dough into 12 equal pieces and roll into balls. Place evenly in the dish.
- Cover and let rise again for 45 minutes or until puffy.
- Preheat oven to 350°F (175°C). Bake the rolls for 20–25 minutes or until golden brown.
- While the rolls bake, melt 2 tbsp butter in a small saucepan with chopped sage and 1 tbsp honey. Let steep for a few minutes.
- Brush the warm rolls with sage honey butter and sprinkle with flaky sea salt.
- Serve warm.
Notes
- Make the dough a day ahead and refrigerate overnight for even better flavor.
- Try using brown butter for a nuttier, richer taste in the topping.
- These rolls pair beautifully with soups or holiday dinners.
