Description

Soft, fluffy brioche rolls infused with a rich honey butter and the earthy aroma of fresh sage. Finished with a hint of flaky sea salt, these rolls are a gourmet twist on a classic comfort bread.

Ingredients

Scale
  • 3 1/2 cups (420g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp salt
  • 4 large eggs
  • 1/2 cup (120ml) warm milk
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (60g) honey
  • 6 fresh sage leaves, finely chopped
  • 2 tbsp unsalted butter (for topping)
  • 1 tbsp honey (for topping)
  • Flaky sea salt, for sprinkling

Instructions

  1. In the bowl of a stand mixer, whisk together flour, sugar, yeast, and salt.
  2. Add eggs and warm milk. Mix using the dough hook until combined.
  3. Add softened butter one tablespoon at a time, mixing until the dough is smooth and elastic (about 10 minutes).
  4. Cover and let the dough rise in a warm place until doubled in size, about 1–1.5 hours.
  5. Grease a 9×13-inch baking dish. Divide the dough into 12 equal pieces and roll into balls. Place evenly in the dish.
  6. Cover and let rise again for 45 minutes or until puffy.
  7. Preheat oven to 350°F (175°C). Bake the rolls for 20–25 minutes or until golden brown.
  8. While the rolls bake, melt 2 tbsp butter in a small saucepan with chopped sage and 1 tbsp honey. Let steep for a few minutes.
  9. Brush the warm rolls with sage honey butter and sprinkle with flaky sea salt.
  10. Serve warm.

Notes

  • Make the dough a day ahead and refrigerate overnight for even better flavor.
  • Try using brown butter for a nuttier, richer taste in the topping.
  • These rolls pair beautifully with soups or holiday dinners.
