Delicious Samoa Cookie Bars inspired by the popular Girl Scout cookie, featuring layers of chewy caramel, toasted coconut, and chocolate on a buttery cookie base.

- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup shredded sweetened coconut, toasted
- 1 cup caramel sauce
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add egg and vanilla, mix well.
- Gradually add flour mixture, mixing until combined.
- Press dough evenly into prepared pan.
- Bake for 15 minutes or until edges are golden.
- Remove from oven and spread caramel sauce evenly over the crust.
- Sprinkle toasted coconut on top of the caramel layer.
- Sprinkle chocolate chips over the coconut, gently pressing them into the caramel.
- Return to oven for 5-7 minutes until chocolate softens.
- Cool completely before cutting into bars.
Notes
- Toast coconut before using to enhance flavor.
- Use store-bought caramel sauce for convenience or homemade for better taste.
- For a firmer chocolate layer, chill bars before cutting.
- Store bars in an airtight container for up to 5 days.
