Description

Ingredients

  • 4 large chicken or turkey sausages, browned and sliced
  • 3 large russet potatoes, peeled and boiled
  • 3 tablespoons butter
  • 1/2 cup milk, warmed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small flour tortillas, warmed
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. Boil potatoes until tender. Mash with butter, milk, salt, and pepper until smooth.
  2. Cook sausages in a skillet over medium heat until browned and cooked through. Slice into bite-sized pieces.
  3. Warm tortillas in a skillet or over a damp towel until pliable.
  4. Spread a layer of mashed potatoes on each tortilla. Top with sausage slices.
  5. If desired, crisp tacos in a dry skillet for a golden edge.
  6. Drizzle with mustard and sprinkle fresh parsley over the top.
  7. Serve warm and enjoy immediately.
