Description

  • 1 cup uncooked long grain rice
  • 1 cup diced bell pepper
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the olive oil and sliced sausage, then cook until lightly browned.
  3. Add the diced onion, bell pepper, and minced garlic. Cook until the vegetables soften and become fragrant.
  4. Stir in the uncooked rice, paprika, dried oregano, salt, and black pepper.
  5. Pour in the chicken broth and bring the mixture to a gentle simmer.
  6. Cover the skillet and cook for 18 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from the heat, fluff the rice gently, and sprinkle with chopped parsley.
  8. Serve warm straight from the skillet.

Notes

  • Brown the sausage well for deeper flavor.
  • Do not stir the rice too often while it cooks, so it stays fluffy.
