- 4 sausages (your choice of type)
- 4 large potatoes, peeled and diced
- 1/2 cup milk
- 3 tablespoons butter, divided
- 1 cup corn kernels (fresh, frozen, or canned)
- Salt and pepper, to taste
- Optional: chopped parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add diced potatoes and cook until tender, about 15-20 minutes.
- While potatoes cook, heat a skillet over medium heat and cook sausages until browned and cooked through, about 10-12 minutes, turning occasionally.
- Drain potatoes and return to pot. Add milk and 2 tablespoons of butter, then mash until smooth and creamy. Season with salt and pepper to taste.
- In a separate pan, melt remaining 1 tablespoon of butter over medium heat. Add corn kernels and cook, stirring occasionally, until heated through and lightly coated with butter, about 5 minutes. Season with salt and pepper.
- Serve sausages alongside mashed potatoes and buttered corn. Garnish with chopped parsley if desired.
Notes
- For extra creamy mashed potatoes, use heavy cream instead of milk.
- You can substitute sausages with chicken sausage or vegetarian sausage for a different twist.
- Frozen corn works well and is convenient; just thaw before cooking.
