Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix Dijon mustard, heavy cream, minced garlic, thyme, salt, and pepper until smooth.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear the pork tenderloin on all sides until golden brown.
- Pour the prepared sauce over the pork.
- Transfer the skillet to the oven and bake for 20 minutes or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork rest for 5 minutes.
- Slice and serve with the creamy Dijon sauce spooned over the top.
