Description

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 ½ pounds seafood mix (shrimp, mussels, clams, calamari)
  • ½ cup white wine substitute (white grape juice with a splash of vinegar)
  • ½ teaspoon red pepper flakes
  • ¼ cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to a boil for pasta and place a deep skillet on medium heat.
  2. Combine Ingredients: Heat olive oil in the skillet, then sauté garlic and onion until golden. Stir in tomato paste for 1 minute.
  3. Prepare Your Cooking Vessel: Add crushed tomatoes, white wine substitute, and red pepper flakes. Simmer gently for 15 minutes.
  4. Assemble the Dish: Add seafood to the sauce, cover, and cook until mussels and clams open and shrimp turn pink (about 5–7 minutes).
  5. Cook to Perfection: While the sauce simmers, cook pasta until just al dente. Drain, reserving 1 cup of pasta water.
  6. Finishing Touches: Toss pasta into the sauce, adding pasta water if needed. Season with salt and pepper.

Notes

  • Always discard unopened mussels or clams after cooking.
  • Reserve pasta water to help emulsify and bind the sauce.
  • Adjust red pepper flakes for more or less heat.
