Description

This sheet-pan salmon with sweet potatoes and broccoli is a simple, wholesome meal that’s packed with flavor and nutrients. Perfect for busy weeknights, this one-pan dish is both easy to prepare and easy to clean up.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
  • 3 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 lemon, sliced (optional for garnish)
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
  2. In a large bowl, toss the sweet potatoes with 1 tablespoon of olive oil, half the garlic powder, paprika, salt, and pepper. Spread them out on the sheet pan and roast for 15 minutes.
  3. Meanwhile, season the salmon fillets with salt, pepper, and the remaining garlic powder and paprika.
  4. After 15 minutes, remove the pan from the oven. Push the sweet potatoes to one side and add the broccoli and salmon to the sheet pan. Drizzle the remaining olive oil over the broccoli and toss to coat.
  5. Return the pan to the oven and roast for another 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork and the vegetables are tender.
  6. Remove from oven and garnish with lemon slices and chopped parsley if desired. Serve warm.

Notes

  • Use skin-on salmon for extra crispness and moisture retention.
  • Try adding a drizzle of balsamic glaze or a sprinkle of red pepper flakes for a flavor twist.
  • Swap broccoli for Brussels sprouts or green beans depending on your preference or what’s in season.
