Instructions
- Preheat a skillet over medium heat while preparing the shrimp mixture.
- In a mixing bowl combine chopped shrimp, panko breadcrumbs, mayonnaise, egg, green onions, garlic, lemon juice, Dijon mustard, salt, and black pepper. Mix gently until evenly combined.
- Add olive oil to the heated skillet and allow it to warm until it lightly shimmers.
- Shape the shrimp mixture into small round patties about 2 to 3 inches wide.
- Place the patties in the skillet and cook for 3 to 4 minutes on each side until golden brown and fully cooked.
- Transfer the cooked cakes to a paper towel lined plate to remove excess oil.
- Serve warm with lemon wedges or your favorite dipping sauce.
Notes
- Chill the shrimp mixture for about 15 minutes before shaping patties to help them hold together.
- Finely chop the shrimp instead of pureeing to keep a tender texture.
- Cook in batches if needed so the pan is not overcrowded.
