Description

Crispy golden shrimp cakes with a tender seafood center, bright lemon notes, and savory herbs. Perfect as an appetizer or light dinner, these flavorful cakes come together quickly and deliver a satisfying crunch in every bite.

  • 1 pound raw shrimp, peeled, deveined, and finely chopped
  • 1 cup panko breadcrumbs
  • 1/4 cup mayonnaise
  • 1 large egg
  • 2 tablespoons green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat a skillet over medium heat while preparing the shrimp mixture.
  2. In a mixing bowl combine chopped shrimp, panko breadcrumbs, mayonnaise, egg, green onions, garlic, lemon juice, Dijon mustard, salt, and black pepper. Mix gently until evenly combined.
  3. Add olive oil to the heated skillet and allow it to warm until it lightly shimmers.
  4. Shape the shrimp mixture into small round patties about 2 to 3 inches wide.
  5. Place the patties in the skillet and cook for 3 to 4 minutes on each side until golden brown and fully cooked.
  6. Transfer the cooked cakes to a paper towel lined plate to remove excess oil.
  7. Serve warm with lemon wedges or your favorite dipping sauce.

Notes

  • Chill the shrimp mixture for about 15 minutes before shaping patties to help them hold together.
  • Finely chop the shrimp instead of pureeing to keep a tender texture.
  • Cook in batches if needed so the pan is not overcrowded.
  • Add an extra squeeze of lemon juice before serving for bright flavor.
