- 3 cups cooked long grain white rice, cold
- 1 pound raw shrimp, peeled and deveined
- 2 large eggs
- 1 cup green peas
- 1 cup carrots, diced
- 3 green onions, sliced
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet or wok over medium-high heat.
- Lightly beat the eggs in a small bowl and set aside.
- Add 1 tablespoon of vegetable oil to the skillet.
- Add the shrimp and cook for 2 to 3 minutes per side until pink, then remove and set aside.
- Add the remaining oil, garlic, carrots, and peas, cooking for about 2 minutes.
- Add the rice and soy sauce, stirring to combine evenly.
- Push the rice to one side, add the eggs, scramble gently, then mix into the rice.
- Return the shrimp to the skillet, season with salt and black pepper, and stir well.
- Add green onions, mix, and serve hot.
Notes
- Use cold rice for the best texture.
- Pat shrimp dry before cooking for better searing.
- Adjust soy sauce to taste.
