Description

A comforting and flavorful shrimp fried rice made with fluffy rice, tender shrimp, eggs, and vegetables, cooked quickly for a satisfying meal.


Ingredients

  • 3 cups cooked long grain white rice, cold
  • 1 pound raw shrimp, peeled and deveined
  • 2 large eggs
  • 1 cup green peas
  • 1 cup carrots, diced
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Lightly beat the eggs in a small bowl and set aside.
  3. Add 1 tablespoon of vegetable oil to the skillet.
  4. Add the shrimp and cook for 2 to 3 minutes per side until pink, then remove and set aside.
  5. Add the remaining oil, garlic, carrots, and peas, cooking for about 2 minutes.
  6. Add the rice and soy sauce, stirring to combine evenly.
  7. Push the rice to one side, add the eggs, scramble gently, then mix into the rice.
  8. Return the shrimp to the skillet, season with salt and black pepper, and stir well.
  9. Add green onions, mix, and serve hot.

Notes

  • Use cold rice for the best texture.
  • Pat shrimp dry before cooking for better searing.
  • Adjust soy sauce to taste.
