- 1 cup green lentils
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 large yellow onion, diced
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 teaspoon dried thyme or 2 fresh sprigs
- 2 bay leaves
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
Instructions
- Place a large pot over medium heat and let it warm up.
- Add olive oil, then sauté onions, garlic, carrots, and celery until soft and fragrant, about 5–7 minutes.
- Stir in the tomato paste and cook for 2 more minutes.
- Add lentils, vegetable broth, thyme, bay leaves, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 30–35 minutes or until lentils are tender.
- Remove bay leaves, adjust seasoning if needed, and drizzle with olive oil before serving.
- Serve hot with crusty bread or over rice.
Notes
- Let the soup sit for 10 minutes after cooking to deepen the flavors.
- You can blend part of the soup for a creamier texture.
- Add a squeeze of lemon before serving for brightness.
