Description

This cozy, comforting French lentil soup is loaded with green lentils, aromatic vegetables, and herbs simmered to perfection in a savory broth. It’s easy to make, full of flavor, and perfect for a wholesome lunch or dinner.


Ingredients

  • 1 cup green lentils
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme or 2 fresh sprigs
  • 2 bay leaves
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)

Instructions

  1. Place a large pot over medium heat and let it warm up.
  2. Add olive oil, then sauté onions, garlic, carrots, and celery until soft and fragrant, about 5–7 minutes.
  3. Stir in the tomato paste and cook for 2 more minutes.
  4. Add lentils, vegetable broth, thyme, bay leaves, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat to a simmer. Cover and cook for 30–35 minutes or until lentils are tender.
  6. Remove bay leaves, adjust seasoning if needed, and drizzle with olive oil before serving.
  7. Serve hot with crusty bread or over rice.

Notes

  • Let the soup sit for 10 minutes after cooking to deepen the flavors.
  • You can blend part of the soup for a creamier texture.
  • Add a squeeze of lemon before serving for brightness.
  • Freezes well for up to 3 months.
