Description

A simple one-skillet meal made with fluffy white rice and colorful vegetables, lightly seasoned and cooked together for an easy, comforting vegetarian dish that works for busy weeknights or meal prep.

  • 1 cup long grain white rice, uncooked
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 medium red bell pepper, diced
  • 1 cup carrots, chopped
  • 1 cup green peas, fresh or frozen
  • 1 cup sweet corn kernels
  • 3 green onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse the rice under cold water until the water runs clear and set aside.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Add the diced red bell pepper and chopped carrots, then sauté for about 3 minutes until slightly softened.
  4. Stir in the rinsed rice, water, green peas, sweet corn, salt, and black pepper.
  5. Bring the mixture to a gentle simmer, then cover the skillet and cook for 15 minutes until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let the skillet rest, covered, for 5 minutes.
  7. Fluff the rice gently with a fork, stir in the sliced green onions, and serve warm.
