- 1/2 teaspoon black pepper
Instructions
- Rinse the rice under cold water until the water runs clear and set aside.
- Heat a large skillet over medium heat and add the olive oil.
- Add the diced red bell pepper and chopped carrots, then sauté for about 3 minutes until slightly softened.
- Stir in the rinsed rice, water, green peas, sweet corn, salt, and black pepper.
- Bring the mixture to a gentle simmer, then cover the skillet and cook for 15 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let the skillet rest, covered, for 5 minutes.
- Fluff the rice gently with a fork, stir in the sliced green onions, and serve warm.
