- 1 1/2 pounds boneless skinless chicken breast, thinly sliced
- 3 bell peppers (red, yellow, green), thinly sliced
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons olive oil, divided
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon fine salt
- 1/2 teaspoon freshly ground black pepper
- 8 medium flour tortillas, warmed
- Optional toppings: sour cream, shredded cheese, guacamole, salsa, chopped cilantro, lime wedges
Instructions
- Heat a large cast-iron skillet over medium high heat until very hot.
- In a bowl, combine chicken, garlic, 2 tablespoons olive oil, lime juice, chili powder, cumin, paprika, salt, and black pepper. Toss to coat well.
- Add the remaining 1 tablespoon olive oil to the hot skillet and swirl to coat the surface.
- Add the marinated chicken in a single layer. Sear 5 to 6 minutes, turning once, until golden and cooked through. Transfer to a plate.
- Add sliced peppers and onion to the same skillet. Cook 4 to 5 minutes, tossing occasionally, until tender crisp with light char.
- Return chicken to the skillet and toss with the vegetables until sizzling and heated through, about 1 minute.
- Serve immediately with warmed tortillas and desired toppings.
Notes
- Marinate while the skillet heats to build flavor fast.
- Cook in batches if needed to avoid steaming and keep a good sear.
- Warm tortillas in a dry skillet or wrapped in a towel to keep them soft.
- Let cooked chicken rest briefly before tossing back with vegetables to stay juicy.
