Ingredients
Scale
- 1 1/2 lbs flank or skirt steak
- 3 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 lime, juiced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 8 small flour tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro
Instructions
- In a bowl, combine 2 tablespoons olive oil, garlic, lime juice, cumin, chili powder, paprika, salt, and pepper. Add steak and marinate for at least 30 minutes (up to overnight).
- Heat 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat.
- Remove steak from marinade and cook for 4–5 minutes per side, or until desired doneness. Remove and let rest.
- In the same pan, add sliced peppers and onion. Sauté for 5–6 minutes until tender and slightly charred.
- Slice the steak thinly against the grain.
- Return sliced steak to the pan to heat through for 1–2 minutes.
- Serve immediately with warm tortillas and your favorite toppings.
Notes
- For extra flavor, grill the steak instead of pan-searing it.
- Use corn tortillas for a gluten-free option.
- Marinate the steak overnight for deeper flavor.
