Description

These sizzling steak fajitas are packed with tender beef, colorful bell peppers, and onions, served hot with warm tortillas and your favorite toppings.


Ingredients

  • 1 1/2 lbs flank or skirt steak
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 8 small flour tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro

Instructions

  1. In a bowl, combine 2 tablespoons olive oil, garlic, lime juice, cumin, chili powder, paprika, salt, and pepper. Add steak and marinate for at least 30 minutes (up to overnight).
  2. Heat 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat.
  3. Remove steak from marinade and cook for 4–5 minutes per side, or until desired doneness. Remove and let rest.
  4. In the same pan, add sliced peppers and onion. Sauté for 5–6 minutes until tender and slightly charred.
  5. Slice the steak thinly against the grain.
  6. Return sliced steak to the pan to heat through for 1–2 minutes.
  7. Serve immediately with warm tortillas and your favorite toppings.

Notes

  • For extra flavor, grill the steak instead of pan-searing it.
  • Use corn tortillas for a gluten-free option.
  • Marinate the steak overnight for deeper flavor.
