- 1 lb beef stew meat, cut into chunks
- 6 oz chorizo sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides, then transfer to the slow cooker.
- In the same skillet, lightly cook the chorizo slices, then add them to the slow cooker.
- Add onion, garlic, bell peppers, diced tomatoes, beef broth, tomato paste, smoked paprika, cumin, chili powder, salt, and pepper to the slow cooker.
- Stir everything gently to combine.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- Garnish with fresh parsley before serving. Enjoy with rice, mashed potatoes, or crusty bread.
Notes
- For extra smokiness, use Spanish chorizo.
- Adjust the chili powder to control the heat level.
- Leftovers taste even better the next day after flavors meld.
