Description

A hearty and flavorful slow-cooked casserole featuring tender beef, spicy chorizo, and a rich tomato-based sauce, perfect for a comforting meal.


Ingredients

  • 1 lb beef stew meat, cut into chunks
  • 6 oz chorizo sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides, then transfer to the slow cooker.
  2. In the same skillet, lightly cook the chorizo slices, then add them to the slow cooker.
  3. Add onion, garlic, bell peppers, diced tomatoes, beef broth, tomato paste, smoked paprika, cumin, chili powder, salt, and pepper to the slow cooker.
  4. Stir everything gently to combine.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  6. Garnish with fresh parsley before serving. Enjoy with rice, mashed potatoes, or crusty bread.

Notes

  • For extra smokiness, use Spanish chorizo.
  • Adjust the chili powder to control the heat level.
  • Leftovers taste even better the next day after flavors meld.
