- 3 to 4 pounds corned beef brisket
- 1 medium green cabbage, cut into wedges
- 4 large carrots, peeled and cut into chunks
- 6 medium potatoes, peeled and halved
- 1 large onion, sliced
- 4 cloves garlic, smashed
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 teaspoon salt
Instructions
- Set the slow cooker to low heat.
- Add onion, garlic, bay leaves, and peppercorns to the bottom of the slow cooker.
- Place the corned beef brisket on top, fat side up.
- Add potatoes and carrots around the beef.
- Pour in the beef broth.
- Cover and cook on low for 8 hours until the beef is tender.
- Add cabbage wedges during the last 2 hours of cooking.
- Remove the beef, let it rest, then slice against the grain.
- Serve with vegetables and broth.
