Description

This Slow Cooker Creole Chicken and Sausage recipe is a hearty, flavor-packed dish full of bold spices, tender chicken, and smoky sausage simmered in a rich tomato-based sauce. Perfect served over rice for a comforting Southern-inspired meal.

  • 12 ounces smoked sausage, sliced into rounds
  • 1.5 pounds boneless skinless chicken thighs, cut into chunks
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 1 cup chopped yellow onion
  • 3 cloves minced garlic
  • 1 cup chicken broth
  • 2 tablespoons Creole seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • Cooked white or brown rice, for serving
  • Sliced green onions, for garnish

Instructions

  1. No need to preheat the slow cooker, but brown the sausage if desired using a skillet.
  2. In a large bowl or directly in the slow cooker, combine sausage, chicken, celery, bell pepper, onion, garlic, diced tomatoes, broth, and all seasonings. Stir well.
  3. Lightly spray the slow cooker with nonstick spray.
  4. Layer vegetables at the bottom, followed by sausage and chicken. Pour tomato broth mixture over. Add bay leaves.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.
  6. Remove bay leaves. Stir well and adjust seasoning to taste.
  7. Serve hot over cooked rice and garnish with sliced green onions.

Notes

  • Brown the sausage first to enhance smoky flavor.
  • Adjust the spice by adding cayenne or hot sauce if desired.
  • Let the dish rest 10–15 minutes after cooking for a thicker sauce.
  • Freeze leftovers for up to 2 months.
