- 12 ounces smoked sausage, sliced into rounds
- 1.5 pounds boneless skinless chicken thighs, cut into chunks
- 1 (14.5-ounce) can diced tomatoes
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 1 cup chopped yellow onion
- 3 cloves minced garlic
- 1 cup chicken broth
- 2 tablespoons Creole seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 bay leaves
- Cooked white or brown rice, for serving
- Sliced green onions, for garnish
Instructions
- No need to preheat the slow cooker, but brown the sausage if desired using a skillet.
- In a large bowl or directly in the slow cooker, combine sausage, chicken, celery, bell pepper, onion, garlic, diced tomatoes, broth, and all seasonings. Stir well.
- Lightly spray the slow cooker with nonstick spray.
- Layer vegetables at the bottom, followed by sausage and chicken. Pour tomato broth mixture over. Add bay leaves.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.
- Remove bay leaves. Stir well and adjust seasoning to taste.
- Serve hot over cooked rice and garnish with sliced green onions.
Notes
- Brown the sausage first to enhance smoky flavor.
- Adjust the spice by adding cayenne or hot sauce if desired.
- Let the dish rest 10–15 minutes after cooking for a thicker sauce.
- Freeze leftovers for up to 2 months.
