Description

Tender slow cooker chicken with fresh lemon, garlic, and basil, cooked low and slow until juicy and full of bright, herby flavor.


Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 cup loosely packed fresh basil leaves, chopped
  • 4 garlic cloves, minced
  • 1 large lemon, juiced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Turn the slow cooker to the low setting to warm it up.
  2. In a medium bowl, whisk together the chicken broth, lemon juice, olive oil, minced garlic, salt, and black pepper.
  3. Lightly grease the slow cooker insert if needed.
  4. Place the chicken thighs in the slow cooker and pour the lemon mixture over the top.
  5. Cover and cook on low for 5 hours, until the chicken is tender and easy to pull apart.
  6. Stir in the chopped fresh basil during the last 10 minutes of cooking.
  7. Serve the chicken hot with the cooking juices over rice, pasta, or vegetables.
