Description

A warm, nostalgic Snickerdoodle Cobbler that captures the cinnamon sugar charm of the classic cookie in a gooey, baked cobbler. Crisp on top, tender inside, perfect served warm with vanilla ice cream.

Ingredients

  • All-Purpose Flour, 1 cup
  • Granulated Sugar, 1 cup
  • Baking Powder, 2 teaspoons
  • Salt, 1/4 teaspoon
  • Whole Milk, 1 cup
  • Unsalted Butter (melted), 1/2 cup
  • Vanilla Extract, 1 teaspoon
  • Ground Cinnamon, 1 1/2 teaspoons
  • Brown Sugar (packed), 1 cup
  • Hot Water, 2 cups

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Mix Dry Ingredients: In a mixing bowl whisk together 1 cup all-purpose flour, 1 cup granulated sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt until evenly combined.
  3. Add Wet Ingredients: Stir 1 cup whole milk, 1/2 cup melted unsalted butter, and 1 teaspoon vanilla extract into the dry mixture until just combined and smooth. Do not overmix.
  4. Transfer Batter: Pour the batter into the prepared 9×13 baking dish and spread it evenly.
  5. Add Topping: Evenly sprinkle 1 cup packed brown sugar and 1 1/2 teaspoons ground cinnamon over the surface of the batter.
  6. Add Hot Water and Bake: Carefully pour 2 cups hot water over the top of the cobbler without stirring. Place the dish in the oven and bake for 40 to 45 minutes until the top is golden brown and the filling is bubbly.
  7. Rest and Serve: Remove from the oven and let rest for 10 minutes to allow the sauce to set slightly. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Use real unsalted butter for the best flavor and texture.
  • Do not stir after pouring the hot water, this helps create the characteristic cobbler sauce.
  • Let the cobbler rest 10 minutes after baking so it sets while remaining gooey.
  • Place the baking dish on a rimmed sheet pan to catch any bubbling over during baking.
  • To deepen the flavor, add a pinch of nutmeg to the cinnamon sugar topping or stir in chopped toasted pecans for crunch.
