- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¾ cup unsalted butter, softened
- ½ cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 cup dulce de leche
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together cornstarch, flour, baking powder, and baking soda.
- In another bowl, cream the butter and sugar until light and fluffy. Add egg yolks, vanilla extract, and lemon zest, mixing until smooth.
- Gradually incorporate the dry ingredients into the wet mixture to form a soft dough.
- Roll the dough between two sheets of parchment paper to about ¼ inch thick and chill for 30 minutes.
- Cut the dough into circles using a round cutter and place on baking sheets.
- Bake for 8–10 minutes or until set but not browned. Let cool completely.
- Spread or pipe dulce de leche on half the cookies and top with the remaining cookies.
- Dust with powdered sugar before serving.

- Do not overbake—cookies should remain pale and soft.
