Description

Soft gingerbread cookies full of warm spices, sweet molasses, and a tender, chewy texture. Perfect for the holidays or any cozy day.


Ingredients

  • 2 ¼ cups all-purpose flour
  • ¾ cup brown sugar
  • ⅓ cup molasses
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, beat softened butter and brown sugar until creamy. Add the egg, molasses, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  5. Cover the dough and chill for at least 1 hour.
  6. Scoop tablespoon-sized portions of dough and roll into balls. Coat each in granulated sugar.
  7. Place the dough balls on baking sheets about 2 inches apart.
  8. Bake for 8–10 minutes or until the edges are set and tops are crackled.
  9. Let cool for 5 minutes on the sheet, then transfer to a wire rack.

Notes

  • Chilling the dough helps prevent spreading and improves flavor.
  • Don’t overbake—cookies will continue to set as they cool.
  • Store in an airtight container with a slice of bread to keep soft.
