- 2 ¼ cups all-purpose flour
- ¾ cup brown sugar
- ⅓ cup molasses
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
- In another bowl, beat softened butter and brown sugar until creamy. Add the egg, molasses, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
- Cover the dough and chill for at least 1 hour.
- Scoop tablespoon-sized portions of dough and roll into balls. Coat each in granulated sugar.
- Place the dough balls on baking sheets about 2 inches apart.
- Bake for 8–10 minutes or until the edges are set and tops are crackled.
- Let cool for 5 minutes on the sheet, then transfer to a wire rack.
Notes
- Chilling the dough helps prevent spreading and improves flavor.
- Don’t overbake—cookies will continue to set as they cool.
- Store in an airtight container with a slice of bread to keep soft.
