- 6 large eggs
- 1/4 cup milk
- 1 lb (450g) breakfast sausage
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup chopped green onions (optional)
- 6 large flour tortillas
- Salt and black pepper to taste
- 2 tablespoons butter
- For the Sausage Gravy:
- 1/2 lb (225g) breakfast sausage
- 3 tablespoons all-purpose flour
- 2 1/2 cups whole milk
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, cook 1 lb of sausage over medium heat until browned. Remove and set aside.
- In a bowl, whisk together eggs, milk, salt, and pepper. Melt butter in a skillet and scramble the eggs until just set.
- Stir in cooked sausage, 1 cup of cheese, and green onions (if using). Remove from heat.
- Divide the mixture evenly among the tortillas. Roll up and place seam-side down in the baking dish.
- To make the gravy, cook 1/2 lb sausage in a saucepan until browned. Stir in flour and cook for 1 minute.
- Gradually whisk in milk. Cook until thickened, stirring constantly. Season with pepper and salt to taste.
- Pour the sausage gravy over the enchiladas. Sprinkle with remaining 1/2 cup cheese.
- Bake uncovered for 20–25 minutes or until bubbly and golden.
Notes
- Use spicy sausage or add jalapeños for a kick of heat.
- Make ahead the night before and bake in the morning for a quick breakfast.
- Top with chopped fresh herbs or hot sauce before serving for extra flavor.
