Description

Southern Breakfast Enchiladas with Sausage Gravy combine the comfort of a Southern breakfast with the bold flavor of enchiladas. Filled with scrambled eggs, cheese, and sausage, then topped with creamy sausage gravy, this dish is perfect for brunch or a hearty breakfast-for-dinner option.

  • 6 large eggs
  • 1/4 cup milk
  • 1 lb (450g) breakfast sausage
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)
  • 6 large flour tortillas
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • For the Sausage Gravy:
  • 1/2 lb (225g) breakfast sausage
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook 1 lb of sausage over medium heat until browned. Remove and set aside.
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Melt butter in a skillet and scramble the eggs until just set.
  4. Stir in cooked sausage, 1 cup of cheese, and green onions (if using). Remove from heat.
  5. Divide the mixture evenly among the tortillas. Roll up and place seam-side down in the baking dish.
  6. To make the gravy, cook 1/2 lb sausage in a saucepan until browned. Stir in flour and cook for 1 minute.
  7. Gradually whisk in milk. Cook until thickened, stirring constantly. Season with pepper and salt to taste.
  8. Pour the sausage gravy over the enchiladas. Sprinkle with remaining 1/2 cup cheese.
  9. Bake uncovered for 20–25 minutes or until bubbly and golden.

Notes

  • Use spicy sausage or add jalapeños for a kick of heat.
  • Make ahead the night before and bake in the morning for a quick breakfast.
  • Top with chopped fresh herbs or hot sauce before serving for extra flavor.
