- 6 cups baby spinach, washed and dried
- 2 tbsp sesame or vegetable oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 3 scallions, thinly sliced
- 2 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sesame seeds for garnish (optional)
Instructions
- Heat the oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger and sauté for 30 seconds until fragrant.
- Stir in scallions and cook for another minute.
- Add baby spinach and toss until just wilted, about 2-3 minutes.
- Pour in soy sauce and rice vinegar, stirring to coat evenly.
- Remove from heat and garnish with sesame seeds if desired before serving.
Notes
- Serve immediately to keep the spinach vibrant and fresh.
- Adjust soy sauce to taste or use low-sodium soy sauce for a lighter dish.
- Great served alongside rice or grilled proteins.
