This Spaghetti Grilled Cheese sandwich is a delicious and creative way to reinvent leftover spaghetti. Cheesy, crispy, and stuffed with saucy pasta, it’s a comfort food mashup you didn’t know you needed!

- 2 slices of bread (sourdough or your choice)
- 1/2 cup leftover spaghetti (with sauce)
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter (softened)
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
- Preheat a skillet or griddle over medium heat.
- Butter one side of each slice of bread. If using Parmesan, press it into the buttered sides for extra flavor and crunch.
- Place one slice of bread, buttered side down, in the skillet.
- Layer with half the cheese, then evenly spread the spaghetti over it. Top with the remaining cheese and the second slice of bread, buttered side up.
- Grill for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from heat, let sit for 1 minute, then slice and serve warm.
Notes
- Use any kind of leftover spaghetti—meat, marinara, or veggie-based sauces work great.
- Try adding fresh basil or red pepper flakes for extra flavor.
- For extra crispiness, grill the sandwich slowly over medium-low heat.
