- 1 teaspoon cumin
- 2 bay leaves
- 2 cups vegetable broth
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Place a large pot over medium heat and let it warm up.
- Add olive oil and sliced chorizo, cook until slightly crispy and fragrant.
- Add chopped onion and minced garlic, cook until soft and aromatic.
- Stir in canned tomatoes, paprika, cumin, and bay leaves, mixing well.
- Add chickpeas and vegetable broth, then simmer for 20 minutes until slightly thickened.
- Season with salt and black pepper, then stir in fresh parsley.
- Ladle into bowls and serve warm.
