Description

This speedy sweet chilli salmon is the perfect fusion of bold flavor and weeknight ease, featuring sticky sweet chili glaze, tender salmon, and crisp broccolini over fluffy rice.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • 2 cups cooked white rice
  • 1 bunch broccolini

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, simmer sweet chili sauce, soy sauce, garlic, and ginger over low heat for 2–3 minutes until slightly thickened.
  3. Place salmon fillets on the prepared sheet and brush generously with the glaze.
  4. Arrange broccolini around the salmon, drizzle with oil, and season with salt.
  5. Bake for 12–15 minutes, then broil for 1–2 minutes for a sticky top.
  6. Remove from oven and sprinkle with sesame seeds and chopped green onions.
  7. Serve over a bed of white rice and drizzle with extra glaze if desired.

Notes

  • Use tamari for a gluten-free version.
  • Marinate the salmon for 30 minutes for deeper flavor.
  • Jasmine rice adds a fragrant touch to the dish.
