- 1 pound raw shrimp, peeled and deveined
- 2 garlic cloves, minced
- 1/2 cup fresh cilantro, chopped
- 1 cup green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- Juice from 2 fresh limes
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
Instructions
- Warm a skillet over medium-high heat while prepping the shrimp.
- In a bowl, toss shrimp with olive oil, chili powder, cumin, paprika, salt, and pepper. Let sit for 5 minutes.
- Add the seasoned shrimp to the hot skillet and cook for 2 minutes on each side until pink and lightly seared. Remove from heat.
- In a separate bowl, mix the cabbage, garlic, cilantro, lime juice, mayonnaise, and sour cream. Toss until well coated.
- Briefly toast tortillas in the same skillet or directly over a gas burner until lightly charred.
- Spoon slaw into each tortilla, top with shrimp, and a final squeeze of lime if desired.
- Serve immediately while warm and fresh.
