- 4 boneless skinless chicken cutlets
- 2 cups fresh spinach, chopped
- 1 cup cremini mushrooms, finely chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F and lightly grease a baking dish.
- In a skillet, heat 1 tablespoon olive oil. Sauté mushrooms for 5–6 minutes until soft. Add garlic and spinach, cooking until wilted.
- Remove from heat, stir in cream cheese and mozzarella, and mix until creamy and well combined.
- Pound chicken cutlets to even thickness. Spoon filling onto one side, roll up, and secure with toothpicks if needed.
- Heat remaining olive oil in skillet. Sear chicken rolls 2–3 minutes per side until golden brown.
- Transfer to baking dish and bake for 20–25 minutes until chicken is cooked through.
- Optional: sprinkle extra cheese on top and broil for 2 minutes until bubbly and golden.
- Let rest a few minutes before slicing and serving.
