- 10 large eggs
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chopped fresh spinach
- 1/2 diced onion
- 1/2 cup diced red peppers
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup Parmesan cheese
- 4 cups diced bread cubes (French or sourdough)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 casserole dish.
- In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
- Fold in chopped spinach, diced onion, diced peppers, mozzarella, Parmesan, and bread cubes.
- Pour mixture into prepared casserole dish and press down slightly.
- Bake for 35-40 minutes until center is set and top is golden.
- Remove from oven and let sit for 5 minutes before serving.
Notes
- Add diced ham or crispy bacon for additional protein.
- Pair with a side salad or fresh fruit.
