Description

Ingredients

  • 10 large eggs
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chopped fresh spinach
  • 1/2 diced onion
  • 1/2 cup diced red peppers
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 4 cups diced bread cubes (French or sourdough)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 casserole dish.
  2. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
  3. Fold in chopped spinach, diced onion, diced peppers, mozzarella, Parmesan, and bread cubes.
  4. Pour mixture into prepared casserole dish and press down slightly.
  5. Bake for 35-40 minutes until center is set and top is golden.
  6. Remove from oven and let sit for 5 minutes before serving.

Notes

  • Add diced ham or crispy bacon for additional protein.
