Description

Soft and tender strawberry cheesecake cookies with a creamy center and bursts of fresh strawberries in every bite. These bakery-style cookies are rich, fruity, and perfectly balanced with a hint of vanilla.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 8 ounces cream cheese, softened
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup fresh strawberries, finely diced and patted dry

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Gently fold in the diced strawberries.
  7. In a small bowl, beat the cream cheese until smooth.
  8. Scoop cookie dough, flatten slightly, place a small spoonful of cream cheese in the center, cover with a bit more dough, and seal the edges.
  9. Place assembled cookies onto prepared baking sheet, spaced evenly apart.
  10. Bake for 12 to 14 minutes until edges are lightly golden and centers remain soft.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chill the dough for 30 minutes if it feels too soft before assembling.
  • Pat strawberries dry thoroughly to prevent excess moisture in the dough.
  • Store cookies in the refrigerator due to the cream cheese filling.
