Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Gently fold in the diced strawberries.
- In a small bowl, beat the cream cheese until smooth.
- Scoop cookie dough, flatten slightly, place a small spoonful of cream cheese in the center, cover with a bit more dough, and seal the edges.
- Place assembled cookies onto prepared baking sheet, spaced evenly apart.
- Bake for 12 to 14 minutes until edges are lightly golden and centers remain soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Chill the dough for 30 minutes if it feels too soft before assembling.
- Pat strawberries dry thoroughly to prevent excess moisture in the dough.
