Description

A light, creamy strawberry mousse made with fresh strawberries, whipped cream, and a touch of vanilla. This chilled dessert is airy, fruity, and elegant enough for guests while still being easy to make at home.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 1 1/4 cups heavy whipping cream, cold
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 1/2 cup extra sliced strawberries, for garnish
  • 1/2 cup whipped cream, for garnish

Instructions

  1. Chill a mixing bowl and beaters for 10 minutes if desired. Set out 6 serving glasses or ramekins.
  2. Add the strawberries, granulated sugar, and lemon juice to a blender or food processor. Blend until smooth, then strain through a fine-mesh sieve into a bowl.
  3. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Warm gently in a small saucepan or microwave until dissolved.
  4. Stir the dissolved gelatin and vanilla extract into the strawberry puree.
  5. In a chilled mixing bowl, beat the heavy whipping cream with the powdered sugar until soft peaks form.
  6. Stir one-third of the whipped cream into the strawberry mixture to lighten it.
  7. Fold in the remaining whipped cream gently until fully combined and no white streaks remain.
  8. Spoon or pipe the mousse into serving glasses or ramekins.
  9. Cover and chill for at least 4 hours, until softly set.
  10. Top with whipped cream and extra sliced strawberries just before serving.

Notes

  • Use ripe, sweet strawberries for the best flavor.
  • Straining the puree gives the mousse a smoother, silkier texture.
  • Do not overwhip the cream, soft peaks keep the mousse light and airy.
  • Garnish just before serving for the freshest look.
